The evening begins with a gently smoked Salmon Tartare with a sublime combination of avocado purée and Royal Oscietra caviar, setting the tone for the night. A sumptuous Butter Poached Lobster follows this, served with a chilled bisque, cress salad, and winter black truffle. The pan-seared Foie Gras, with its crunchy hazelnuts and cherry velouté, adds a rich layer of decadence.

For the main course, diners have a choice between the Pan-Seared Snow Fish, accompanied by a capsicum sauce, rainbow carrots, and Amalfi lemon jelly, or the 72-Hour Japanese Hitachiwagyu beef, served with mushroom stuffed potatoes, Jerusalem artichoke, and a black truffle Madeira sauce.
